I’m a soupie…like a foodie, but for soup. I love when those cold nights and evenings come around because that means that I can cuddle up with a bowl of keto-friendly soup. This keto stuffed pepper soup crockpot recipe is seriously delicious. It’s no secret that I make a ton of keto recipes every week, and this soup is one of my new favorites.
One of the biggest reasons that I love this Keto Stuffed Pepper Soup is because it’s not labor-intensive at all you throw the ingredients into the crop pot and leave it until the cooking time is up. This keto stuffed pepper crock-pot recipe delivers a powerful punch of flavor. On Sunday afternoon or Monday morning, I often make a big pot of soup to cover our lunches for several days.
I always view a recipe as a huge hit when my kids’ request “seconds”……..and this recipe delivered just that. I could hear the scraping of the spoons in the empty bowls searching for the last spoonfuls. We’d found a soup recipe hit!
Is Stuffed Pepper Soup Keto?
Yes, since we replaced brown rice with cauliflower, this is a hearty, delicious keto soup. Along with being keto/low carb friendly, this soup is also gluten-free. However, if you do have a gluten allergy check all the ingredients listed in the recipe card to make sure this soup is ok for you. One of my kids has a severe nut allergy, so I know you can’t leave anything up to chance.
My Favorite Slow Cooker for making Keto Stuffed Pepper Soup
The Ninja Slow Cooker is my favorite slow cooker. I can’t tell you how much I love the fact that I can brown the ground beef and then slow cook it all in one in the slow cooker. Plus, if I want to reduce the soup, I can turn it on the stovetop function and boil it or leave it on “stay warm” to serve later. I didn’t think there was that much of a difference between slow cookers, but the Ninja Multi Slow Cooker proved me wrong.
By chopping up the bell peppers and onions into larger chunks, it will give this low carb stuffed pepper soup a hearty flavor.
What else can I use instead of ground beef?
Ground turkey is another great option to replace ground beef. Its flavors will pair well with the tomatoes, bell peppers, and riced cauliflower.
If you don’t have the Ninja 4-in-1 crock-pot, this recipe is still simple to prepare. You start by browning the ground beef in a skillet with the onions and garlic first.
Pro Tip:
I brown ground beef in large batches then freeze for later. This is a massive time-saver for keto meal prep.
A few minutes before the ground beef is browned, add the green bell pepper and yellow pepper to the mixture and continue sauteeing.
Dump all the cooked riced cauliflower, diced tomatoes, seasoning, beef broth, and remaining ingredients into the slow cooker.

How to Make Keto Stuffed Pepper Soup in the Crock-Pot
Keto Stuffed Pepper Soup
Ingredients
- 1 pound ground beef
- 3 garlic cloves
- 1/2 onion
- 1 green pepper, chopped
- 1 yellow pepper, chopped
- 1 8 ounce can tomato sauce
- 1 10 ounce can Rotel (diced tomatoes and green chilis)
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 2 cups beef broth
- 2 tablespoons Braggs Aminos
- 1/4 teaspoon pepper
- 1/2 10 oz steam bag cauliflower rice (you can add more but my children will not eat if there is more cauliflower)
Instructions
- Brown ground beef with onion and garlic. The last 5 minutes of cooking, add the chopped green pepper. Drain.
- Microwave the 10 oz steam bag of riced cauliflower (I only use half of a steam bag of cauliflower because my children won’t eat it if I add any more, but feel free to add more if you would like)
- Add all ingredients including the riced cauliflower to the slow cooker and cook on low for 8 hours or high for 4.

I forgot to say in my comment that I was in a hurry, so I cooked this on the stove top and it turned out great! I just simmered it in a small Dutch oven on my gas range for 30 minutes or so. It was delicious!! 🙂
