We are heading to Pigeon Forge for a couple of day this week, but since so many of you have said that my meal plans are helpful, this Keto Meal Plan will cover the week even though we will be out of town. Having a loose meal plan helps me so much to stay on track and keep my grocery budget under control. It also keeps me from stressing out around 5pm every afternoon trying to figure out what to cook for dinner when the babies are waking up.

As I have said before, I take a somewhat lazy approach to meal planning. I don’t prep a lot of food in advance simply because I don’t have the time. Instead, I have found that making extra at meals to cover lunch the next day is the most helpful step I can take. I also like to buy ground beef in bulk when I can and brown it in advance and freeze it in ziplock bags. It makes cooking dinner later so much faster. Monday:

Breakfast – Bulletproof coffee

Lunch – Hot Ham & Cheese Unwich Casserole

Dinner – Jalapeno Popper Soup

Tuesday:

Breakfast – Bulletproof Coffee

Lunch – leftover Jalapeno Popper Soup

Dinner – Roasted Spaghetti Squash with low carb Spaghetti Sauce (Rao’s  and Mezzeta are both low carb and sold at most Walmart stores) & a garden salad

Wednesday:

Breakfast – Bulletproof Coffee

Lunch –  leftover Roasted Spaghetti Squash with low carb Spaghetti Sauce

Dinner – We grab dinner out on Wednesday nights so we can make it to church on time.

Thursday

Breakfast – Bulletproof Coffee

Lunch – Leftover Hot Ham & Cheese Unwich

Dinner – Parm Crusted Pork Chops & Loaded Broccoli 

Friday

Breakfast – Bulletproof Coffee

Lunch – leftover Parm Crusted Pork Chops & Loaded Broccoli 

Dinner – Smoked Sausage & Cabbage 

Saturday

Breakfast – Mixed Berry Muffins, bacon & eggs

Lunch – Empty the fridge day of all the leftovers

Dinner – Bunless burgers & grilled zucchini

 

Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds

Sweet Treat – Chocolate Chip Cheesecake Muffins
