HOW TO MAKE THIS KEY LIME KETO MOUSSE DESSERT RECIPE
One of my favorite desserts is Key Lime Pie so I thought I’d create a keto/low carb mousse version. Without a crust, it is nut-free for those with tree nut allergies and it keeps the carb count lower.
It took several tries to get the tartness of the Key Lime Mousse just right. Also, the measurements I have included for both the key lime zest and key lime juice may vary as some limes aren’t nearly as tart as others. So, when you make this dessert make sure to taste the recipe as you go to get the perfect tartness. I would recommend refrigerating overnight for maximum flavor.

TIPS for this keto mousse recipe
Always make sure your bowl, beaters, and any measuring tools you use are completely dry. Otherwise, the added moisture could interfere with the heavy cream beating to stiff peaks.
Ingredients:
- Cream Cheese
- Heavy whipping cream
- Key lime zest
- Key Lime Juice
- Lakanto Monkfruit Powdered
Steps:
Step 2: In a separate bowl, beat on medium speed the cream cheese, Lakanto Monkfruit Powdered, lime juice, and lime zest until the mixture is smooth.
Step 3: Combine the two bowls and beat with a mixer until everything is combined.
Step 4: Spray an 8 X 8 pan with cooking spray and spread the key lime layer evenly in the bottom of the pan.
Second Layer
Step 5: Combine the heavy whipping cream and Lakanto Monkfruit Powdered and beat until stiff peaks form.
Step 6: Spread the homemade whipped cream on top of the key lime layer.
Step 7: Refrigerate overnight and enjoy it!

The amount of key lime juice used in this recipe can vary depending on the ripeness and size of the limes you are using. It is important to taste this recipe as you add the lime zest and juice as you may need a little more or less.

Tips for making this keto key lime mousse
Allow the cream cheese to come to room temperature so that it will be nice and creamy. This will make a lighter mousse with an airy texture.
Don’t overbeat heavy whipping cream or it can become grainy. If this happens, simply add a little heavy whipping cream and with a couple turns of a whisk you’ll have creamy peaks once again.
Gluten-Free Keto Mousse recipe
Along with being low in net carbs, this recipe is also gluten-free. However, if you have a gluten allergy, make sure to check the ingredients before making it. My daughter has a nut allergy, so I know you cannot leave anything up to chance.
CAN YOU FREEZE KETO MOUSSE?
Yes, you can freeze this Key Lime Keto Mousse recipe for up to two months. To thaw stick it in the fridge overnight, or until it can either be sliced or scooped out with a spoon. I have often enjoyed it frozen as well. To do so, I let it sit out for about 10-15 minutes first.
HOW DO YOU STORE KEY LIME KETO MOUSSE?
Mousse can either be stored in the fridge for five days or the freezer for two months. It will take several hours once placed in the fridge for the mousse to firm up completely. I often pop it in the freezer for 45 minutes to an hour so that it can firm up quickly before serving. Then, I set it out on the counter for a few minutes to make serving easier.
WHY ARE LIMES AND KEY LIMES DIFFERENT?
Key limes are smaller than limes and are known to pack a more acidic punch than regular limes. However, you can substitute limes for key limes if you do not have any available. Taste your keto mousse as you go because you may need to add more lime juice than you would key lime juice.

I’m wondering if I did the lime zest correctly. The finished mousse had strands of the lime peel in it and I hated that texture! Is there a way to get it smooth? What did I do wrong?

This is delicious! Could not find key limes, and online it said you could add lemon with the lime as a substitute, it worked great. 3T lime zest 2T lemon zest, 2t lime juice 1t lemon juice.
