Simple Keto Meal Plan

Last week was a little rough around here. Two of our kids came down with the stomach bug, then it hit me and took me out. I haven’t been that sick in a very long time. It’s not much fun to be a food blogger when all food sounds disgusting. We are all on the mend, thankfully. I struggled to come up with a simple Keto Meal Plan for the week as my son has two baseball games. We either have to eat dinner at 4:30 or later around 8:30. The later meal doesn’t work for the little because they will be starving by then. His fall ball season only lasts for a month, so I’m sure I’ll have dinner all figured out just about the time that it is wrapping up for the year.

As I have said before, I take a somewhat lazy approach to meal planning. I don’t prep a lot of food in advance just because I don’t have the time. Instead, I have found that making extra at meals to cover lunch the next day is the most helpful step I can take. I also like to buy ground beef in bulk when I can and brown it in advance and freeze it in ziplock bags. It makes cooking dinner later so much faster. If you are new to meal planning, these 5 easy steps meal prep ideas will be helpful to get started. As always, this is a very loose plan. If I get a better offer for dinner out, I won’t hesitate to alter our simple keto meal plan for dinner out.

Simple Keto Meal Plan

Monday:

Breakfast – Bulletproof coffee

Lunch – Queso Soup

Dinner – Bunless Burgers with grilled broccoli, asparagus, and zucchini

Tuesday:

Breakfast – Bulletproof Coffee

Lunch – leftover Queso Soup

Dinner – Cheesy Mexican Skillet

Wednesday:

Breakfast – Bulletproof Coffee

Lunch –  leftover Cheesy Mexican Skillet

Dinner – We eat out on Wednesday nights so we can get to church on time.

Thursday

Breakfast – Bulletproof Coffee

Lunch –  Hot Ham & Cheese “Unwich” Casserole

Dinner –  Chicken Lombardy & Garden Salad

Friday

Breakfast – Bulletproof Coffee

Lunch – leftover Chicken Lombardy

Dinner – Farmhouse BBQ Muffins & Roasted Asparagus

Saturday

Breakfast – Cheesy Bacon Bites & eggs

Lunch – Instant Pot Keto Chili

Dinner – order pizza and eat the toppings off of it

Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds

Sweet Treat –Pumpkin Fluff
