Keto Meal Plan Week 12
We won’t be eating at home as much this week due to the 4th of July holiday, and a possible out of town trip to see my family next weekend. I did include meals that cover the weekend just in case we end up staying home. I have had so many of you tell me how much you appreciate these meal plans. I really try to keep them as simple as possible. If you are busy like me, I just don’t have time to invest in extravagant meals each night. Making extra at dinner to cover lunch the next day also saves me tons of time. If we happen to not have enough the next day for lunch, then I’ll eat lunch meat and cheese with some pecans on the side to make it easy. As a mom of 4, I just don’t care what I eat for lunch most days. My only requirements are easy, as mess free as possible, and keto friendly, of course.
As I have said before, I take a somewhat lazy approach to meal planning. I don’t prep a lot of food in advance simply because I don’t have the time. Instead, I have found that making extra at meals to cover lunch the next day is the most helpful step I can take. I also like to buy ground beef in bulk when I can and brown it in advance and freeze it in ziplock bags. It makes cooking dinner later so much faster. As always, this is a very loose plan. If I get a better offer for dinner out, I won’t hesitate to alter our meal plan for
Monday:
Breakfast – Bulletproof coffee
Lunch – leftovers bunless burgers and grilled veggies from this weekend
Dinner – We have dinner plans out tonight.
Tuesday:
Breakfast – Bulletproof Coffee
Lunch – Hot Ham & Cheese Unwich
Dinner – BBQ Meatloaf, Southern Green Beans, Mashed Cauliflower
Wednesday:
Breakfast – Bulletproof Coffee
Lunch – leftover BBQ Meatloaf & Southern Green Beans
Dinner – We are grilling out for the 4th. Ribeye Steaks, Grilled Zucchini & Squash, and a Garden Salad. Dessert will be either Lemon Berry Fluff or Lemon Pie
Thursday
Breakfast – Bulletproof Coffee
Lunch – leftover Hot Ham & Cheese Unwich
Dinner – Chicken Fajita Soup
Friday
Breakfast – Bulletproof Coffee
Lunch – leftover Chicken Fajita Soup
Dinner – Order Pizza (we will just eat the toppings)
Saturday
Breakfast – Bacon & Eggs
Lunch – Empty the fridge day of all the leftovers
Dinner – Smoked Pulled Pork and Loaded Broccoli
Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds
