The hubs and I are currently in NYC for an early 22nd-anniversary celebration (our anniversary is in December) and a short business trip. Being here has certainly made me appreciate traffic, or lack of, in the small town that we live. At the same time, NYC is so incredibly interesting and there is so much to do. We almost don’t know what to do with ourselves without the kids in tow. It feels so weird not to have them here, but it is so good to spend time alone with each other. We always want our kids to see that we make purposeful time for each other and that our marriage is a priority. So, while we won’t be coming back to town for a few days I still wanted to make sure I posted a Keto Meal Plan since so many of you have love it.

As I have said before, I take a somewhat lazy approach to meal planning. I don’t prep a lot of food in advance just because I don’t have the time. Instead, I have found that making extra at meals to cover lunch the next day is the most helpful step I can take. I also like to buy ground beef in bulk when I can and brown it in advance and freeze it in ziplock bags. It makes cooking dinner later so much faster. Monday:

Breakfast – Bulletproof coffee

Lunch – Instant Pot Keto Broccoli & Cheese Soup (Broccoli & Cheese Stovetop Recipe)

Dinner – Baked Chicken Fajitas with Homemade Queso (we serve on a bed of leafy green lettuce)

Tuesday:

Breakfast – Bulletproof Coffee

Lunch – leftover  Instant Pot Keto Broccoli & Cheese Soup (Broccoli & Cheese Stovetop Recipe)

Dinner – Spaghetti made with low carb marinara sauce (I use Mezzettas or Rao’s brand) and ground beef served over roasted spaghetti squash with a salad

Wednesday:

Breakfast – Bulletproof Coffee

Lunch –   leftover low carb spaghetti on spaghetti squash

Dinner – We eat out on Wednesday nights so we can get to church on time.

Thursday

Breakfast – Bulletproof Coffee

Lunch –  Hot Ham & Cheese Unwich Casserole 

Dinner – Low Carb Chicken Casserole & Leafy Garden Salad

Friday

Breakfast – Bulletproof Coffee

Lunch – leftover  Low Carb Chicken Casserole & Leafy Garden Salad

Dinner –BBQ Meatballs & Southern Green Beans

Saturday

Breakfast – Homemade Keto Pumpkin Bread with bacon and eggs

Lunch – Clean out the fridge of all the leftovers for the week

Dinner –  Grilled Steaks & Zucchini with a salad

Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds

Sweet Treat-  Low Carb French Coconut Pie
