Easy Keto Meal Plan

It is Sunday, which means it is time for this week’s Easy Keto Meal Plan. I wrote out my meal plan last night; grocery shopped online and have already picked up my groceries today. This will make my week less stressful since I won’t be trying to figure out meals as I go or plan a trip to the grocery store in the middle of our already packed week.

My son starts back Fall Baseball this week, so we have two games. It will be an adjustment trying to figure out when to cook dinner since his games this week are at 6:15 and we have to be there at 5:30. I am guessing that eating afterward will be our best bet, so I’m going to use my crock pot on game nights to see how it works.

As I have said before, I take a somewhat lazy approach to meal planning. I don’t prep a lot of food in advance just because I don’t have the time. Instead, I have found that making extra at meals to cover lunch the next day is the most helpful step I can take. I also like to buy ground beef in bulk when I can and brown it in advance and freeze it in ziplock bags. It makes cooking dinner later so much faster. If I get a better offer for dinner out, I won’t hesitate to alter our meal plan for dinner out.

Monday:

Breakfast – Bulletproof coffee

Lunch – 90-Second Personal Pan Pizza

Dinner – Pork Tenderloin in the crockpot with Homemade Low Carb BBQ Sauce and Loaded Broccoli
(I’ll cook the pork tenderloin on low for 6-8 hours in my crockpot with two tablespoons of butter, then shred it when it is done and add homemade sugar-free BBQ sauce. Then, I’ll cook for an additional 30 minutes or so.)

Tuesday:

Breakfast – Bulletproof Coffee

Lunch – leftover Pork Tenderloin & Loaded Broccoli  

Dinner – Taco Salads with The Very Best Taco Meat cooked in the crockpot

Wednesday:

Breakfast – Bulletproof Coffee

Lunch –  leftover Taco Salads

Dinner – We eat out on Wednesday nights so we can get to church on time.

Thursday

Breakfast – Bulletproof Coffee

Lunch –  Hot Ham & Cheese Rollups with a garden salad

Dinner – Chicken Fajita Soup

Friday

Breakfast – Bulletproof Coffee

Lunch – leftover Chicken Fajita Soup

Dinner – Pizza Casserole & Garden Salad

Saturday

Breakfast – Mixed Berry Muffins with bacon & eggs

Lunch – Empty the fridge day of all the leftovers

Dinner – Grilled Ribeye Steaks & Zucchini

 

Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds

Sweet Treat – Pumpkin Cheesecake Muffins
