This Keto Cinnamon Cake is one of those desserts that you’ll want to make again and again.

Keto Specialty Ingredients Used in this Recipe:
Coconut flour – If you want to use almond flour it is not a 1:1 sub. 1/4 cup coconut flour = 1 cup almond flour
Monkfruit Golden or Swerve Brown – This is a brown sugar substitute
Monkfruit Powdered or Swerve Confectioners

The crunchy topping is such an incredible addition to this Keto Cinnamon Cake.
When you first take the cake out of the oven, some of the butter from the streusel topping will be sitting on the top. Don’t worry, this is normal. As the cake cools, the butter will seep down into the cake making it even more amazing.

Keto Cinnamon Cake
Ingredients
- 9 tablespoons butter, softened
- 5 eggs
- 1 egg white
- 1/2 cup Monkfruit powdered
- 1 tablespoon cinnamon
- 1 1/2 teaspoon vanilla
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 9 tablespoons coconut flour
Ingredients for the Topping
- 1/2 cup pecans, chopped
- 4 tablespoons butter, melted
- 2 tablespoons coconut flour
- 1/2 cup Monkfruit Golden
Instructions
- Preheat oven to 350 degrees.
- Grease an 8 X 8 square pan.
- Combine butter, eggs, egg white, Monkfruit powdered, cinnamon, and vanilla and beat well.
- Add coconut flour, baking powder and salt to the other ingredients and mix well.
- Pour batter into the baking dish.
- In a separate bowl, add all the ingredients for the topping and stir with a fork to combine all the ingredients.
- Spoon topping evenly on top of batter.
- Bake for 25-30 minutes or until a toothpick or knife inserted in the middle comes out clean.
- When it comes out of the oven some of the butter from the topping will be on top but it will settle down into the cake making it amazingly moist and delicious as it cools.

Not at all. Coconut flour is very absorbent so you need lots of eggs to keep it from being dry. This is one of my favorite dishes. So moist and yummy!

Made this tonight. It’s cooling and it smells delicious! Please help me understand the sugar alcohols from both varieties of Monkfruit. I understand the concept of sugar alcohols not affecting carbs, but I when I scan the barcodes on Lakanto Powdered and Lakanto Golden (along with all the other ingredients), I end up with 23 net carbs per serving. What have I done wrong?

You don’t include the sugar alcohols in the net carbs. They are subtracted because they do not impact blood sugars.
