How I Make Keto Meal Plans Easy: Keep it Simple
Just when we thought life was going to slow down when my son’s baseball season was over, we jumped right into basketball for my oldest daughter. Previously, our kids have always played sports through our county’s rec league or Upwards program, which has required a minimal commitment. This year, she is playing on the varsity team at a local Christian school that allows homeschoolers to play. I feel like we have jumped off the deep end with almost daily practices and several games a week. More than ever, I need Keto Meal Plans easy for my family to stay on track. We may not be able to stick to it every single day, depending on how crazy our schedule gets, but at least I have a plan and know that there are options if we end up going out to eat that are low carb friendly.
I try to take a simple approach and make meals that don’t require a ton of ingredients and are easy to prepare. I further simplify by doubling and tripling recipes at dinner so that we will have leftovers to cover our lunches during the week. As a stay at home mom of 4 who also homeschools we eat at home most days, so that means I need lots of food readily available to feed everyone. Otherwise, I would spend the bulk of my days in the kitchen. I don’t prep a lot of food in advance as I don’t have a bulk of extra time in my week; however, there are a couple of things that I do that save time like browning ground beef in advance and freezing it to use later. Many of you have asked for breakfast ideas during the week. I usually just drink bulletproof coffee in the mornings during the week as it helps me to keep my protein lower and my fat high. Plus, after my kids eat breakfast, it is just easier to drink coffee so we can jump right into our homeschool day. This week I include an alternate breakfast suggestion besides bulletproof coffee for those of you who prefer to eat breakfast. I hope that this addition is helpful.

Lunch – Hot Ham & Cheese Roll-Ups and cucumbers
Dinner – Chicken Pot Pie
*Time Saving Tip – Cook enough chicken in the slow cooker today for both the Chicken Pot Pie that is on the menu for tonight and the Cheesy Ranch Chicken & Broccoli that is on the menu tomorrow.
Breakfast – Bulletproof Coffee or scrambled eggs and bacon
Lunch – leftover Chicken Pot Pie
Dinner – Cheesy Ranch Chicken & Broccoli & a leafy garden salad
Breakfast – Bulletproof Coffee or leftover Sausage Ball Puffs
Lunch – leftover Cheesy Ranch Chicken & Broccoli & a leafy garden salad
Dinner – We eat out on Wednesday nights so we can get to church on time.

Lunch – Homemade Chef Salad with Black Forest Ham

Time-Saving Tip: Brown extra ground beef instead of just enough for tonight’s meal. I always brown several pounds at once so that I can put it in the freezer for later. Also, you’ll need ground beef for tomorrow night’s dinner, so there is no need to brown it two nights in a row if it’s not necessary.
