LOW CARB UNSTUFFED CABBAGE ROLLS SKILLET

I don’t know about you, but we love one-skillet meals. It’s so nice to have only one pan to wash after dinner. Before we started eating keto, I felt like I had to have multiple sides at dinner. Now that I’ve been eating keto for over three years, I am satisfied with so much less. If you need a side dish, pair a simple leafy green salad alongside this Low Carb Unstuffed Cabbage Skillet. My entire family loved this meal.

A take-off of my very popular Keto Unstuffed Cabbage Soup, this one-skillet version of keto unstuffed cabbage rolls is quick, easy, and satisfying. This recipe simplifies the traditional cabbage rolls and makes them fuss-free in just a few steps. Simple ingredients like ground beef and cabbage along with diced tomatoes, tomato sauce and spices together give this meal incredible flavor. 

HOW TO MAKE KETO UNSTUFFED CABBAGE ROLLS SKILLET:

Ingredients:

  • Onion
  • Garlic cloves
  • Ground beef
  • Cabbage, chopped 
  • Rotel Tomatoes
  • Tomato sauce
  • Bragg’s Aminos
  • Beef broth
  • Parsley, Salt, & Pepper

Step 1: In a skillet, brown ground beef with onions and minced garlic then drain and return to pan.

Tip: I keep ground beef already browned in the freezer, which makes this low carb Unstuffed Cabbage Rolls Skillet a quick and easy recipe. In this post of 5 easy meal prep ideas, I explain how I do this without a significant investment of time. Once you start browning ground beef and freezing it, you’ll wonder how you ever made it without having it on hand. You could use ground turkey instead if you prefer. 

I use a cast iron skillet to make this recipe, but you could also use a dutch oven or regular stainless or nonstick skillet.

Step 2: Add all other ingredients then bring to a boil and reduce heat to medium. The skillet will be very full as the cabbage takes up a lot of room, but it will reduce as it steams. Cover the pan with the lid and allow it to cook for 15 minutes. 

Tip: If you’ve never cut a fresh cabbage, here is a great post with instructions. You could also use preshredded cabbage to save time.

Step 3: Remove the lid and stir, then simmer on medium heat with the lid off until the liquid in the skillet has reduced. It took mine about 12 minutes but cooking time may vary.

Variations to this recipe:

  • Add green peppers and mushrooms. 
  • Sub ground turkey for ground beef
  • Top with shredded cheese when  done
  • Add taco seasoning instead of the Bragg’s Aminos to change up the flavor. 
  • Add jalapenos to turn up the heat if you like spicy foods. 

CAN YOU FREEZE this KETO UNSTUFFED CABBAGE ROLLS SKILLET?

I store it in the fridge for up to 5 days in an airtight container. I have not personally tried freezing so I can’t speak to how well it would hold up to being frozen as my family always gobbles it up.

    1. The recipe is 6 servings and the nutritional info is per serving. I just divide it evenly into six servings.

    1. Why not add a bag of frozen riced cauliflower to replicate the traditional recipe?

    I made this last night and I really enjoyed it. I had to tweak the recipe a bit as to not waste half the onion and half the can of Rotel Diced Tomatoes with Chiles. It actually turned out really good. I never really cooked with cabbage before and thought it would cook down more. So I ended up with more cabbage than meat but it is ok, still turned out really good. I did have to heavily seasoned the cabbage when it was done cooking. Of course that was due to personal taste. The smell reminded me of meat and potatoes and I really enjoyed it. For making it one time, I am really impressed with this recipe. I will double the meat in ratio to the size of head of cabbage I get.

    This dish is extremely easy and delicious! I served it with leftover green beans. My local grocery store did not carry Bragg’s Liquid Aminos so I just used regular low-sodium soy sauce. I also used low-sodium beef broth. I used the entire 8 oz can of Rotel (maybe a few more carbs but oh well). I also used more cabbage. I used my iron skillet as you suggested and added about 2 tablespoons of olive oil before cooking my beef, garlic, and onion (so I will meet my fat macros today). I did not add any salt and the saltiness was perfect. I will most def be making this again, and probably soon! 🤤😋🍽

  5. I used an extra pound of ground beef, and because of that I added extra oyf the spices. I didn’t have tomato sauce so I substituted with spicy V-8 tomato juice. This is delicious and will definitely be making again!

  7. Could you add cauliflower rice to this dish to make it more substantial? Or is it pretty substantial on its own? When I think of cabbage rolls there’s always rice lol.

  8. Can youuse a mixture of greens(romaine, red and green cabbage, green onion-premixed bag)? It has some carrot, but I can take it out.

    Yum! This was so good. I followed the recipe exactly. I served with cauliflower rice on the side for me, and made a pot of white rice for the rest of the family. It’s always a good sign when there’s no leftovers for the next day =) Thanks for another great recipe!
