Low Carbohydrate Diet Meal Plan: Week 43
We are on spring break this week, and although we have a kitchen where we are staying, I’m taking the week off and am not cooking one thing. That way by the time we get home, I’ll be refreshed and hopefully full of new inspiration to create brand new keto recipes. So, although we won’t be following a meal plan this week, I’m still posting one for those of you who enjoy seeing them each week for inspiration. Last week I slimmed down the weekly keto meal plans to dinner only, to be more intentional with my time. I have a considerable keto/low carb recipe index with tons of ideas for easy meals if you need further inspiration for breakfast, lunch, or alternate dinner recipes.
This Week’s Low Carbohydrate Diet Meal Plan for Dinner
Low Carb Breakfast Ideas: You can find lots of keto breakfast ideas here. I typically only drink bulletproof coffee for breakfast as it keeps me full for hours. I recently posted how I make my bulletproof coffee since I had so many of you ask. To keep it simple at lunch, I prefer to eat leftovers, so I am not spending a ton of time in the kitchen during our homeschool day. I have a big family so to make this happen I often double or triple recipes when I prepare dinner.
Sunday: Instant Pot Unstuffed Cabbage Soup (this recipe also includes instructions for making in the slow cooker)
*Time-saving tip: When you brown the ground beef for this recipe grab a few extra pounds and follow the instructions here to brown it all at once and freeze the extra for later. Then on Friday when you make the Keto Sloppy Joe, you can grab it already browned out of the freezer and have dinner ready in a snap! I never brown just enough ground beef for one recipe. I always brown several pounds at once to keep my freezer stocked.
Monday: Cheesy Mexican Skillet with a garden salad
* Time-saving tip – double the recipe for the Easy BBQ Keto Meatloaf and freeze the extra one for a quick dinner later
Thursday: Low Carb Chicken Pot Pie
Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds
Sweet Treat – Peanut Butter Fluff
