Easy Keto Meal Plans 

This week two of my girls’ have a birthday. My oldest will be 15, and baby number 3 will be four years old. I don’t even know where the time has gone. Do you wonder how I handle “cheat meals” or day’s off plan, as I call them, for holidays or my children’s birthdays? This week’s easy keto meal plan may be even more simple than usual because we have a full schedule.

I try to take a simple approach and make meals that don’t require a ton of ingredients and are easy to prepare. I further simplify by doubling and tripling recipes at dinner so that we will have leftovers to cover our lunches during the week. As a stay at home mom of 4 who also homeschools we eat at home most days, so that means I need lots of food readily available to feed everyone. Otherwise, I would spend the bulk of my days in the kitchen. I don’t prep a lot of food in advance as I don’t have a bulk of extra time in my week; however, there are a couple of things that I do that save time like browning ground beef in advance and freezing it to use later. Many of you have asked for breakfast ideas during the week. I usually just drink bulletproof coffee in the mornings during the week as it helps me to keep my protein lower and my fat high. Plus, after my kids eat breakfast, it is just easier to drink coffee so we can jump right into our homeschool day. This week I include an alternate breakfast suggestion besides bulletproof coffee for those of you who prefer to eat breakfast. I hope that this addition is helpful.

Many of you asked for a breakfast option during the week besides bulletproof coffee so I have added breakfast ideas as well.

Monday:

Breakfast – Bulletproof Coffee or Keto Breakfast Bake with Ham, Eggs, and Cheese 

Lunch – Unstuffed Cabbage Soup

Dinner – Pizza Casserole & a Garden Salad (this was on the menu for last Friday but we ended up eating dinner with friends)

Tuesday:

Breakfast – Bulletproof Coffee or Pumpkin Bread and Bacon

Lunch – leftover  Pizza Casserole & a Garden Salad

Dinner – Chicken Philly Cheesesteak & a garden salad

Wednesday:

Breakfast – Bulletproof Coffee or Keto Breakfast Bake with Ham, Eggs, and Cheese 

Lunch –   leftover  Unstuffed Cabbage Soup

Dinner – We eat out on Wednesday nights so we can get to church on time.

Thursday

Breakfast – Bulletproof Coffee or Pumpkin Bread and Bacon

Lunch –  leftover Chicken Philly Cheesesteak on 90-Second Bread

Dinner – Roasted Spaghetti Squash with low carb Spaghetti Meat Sauce & Garlic Cheddar Biscuits
I use either Rao’s or Mezzetta’s Marinara Sauce that I found at Walmart.

Friday

Breakfast –  Bulletproof Coffee or bacon and eggs

Lunch – Roasted Spaghetti Squash with low carb Spaghetti Meat Sauce & Garlic Cheddar Biscuits

Dinner – Cheesy Mexican Skillet 

Saturday

Breakfast – Mixed Berry Muffins, Sausage, and eggs

Lunch – Keto Chili (Instant Pot recipe or Stovetop recipe) We eat chili a lot during football season. It’s kind of a tradition around here when we watch the Ohio State Buckeyes play.

Dinner – It’s going to be a busy week and I’m going to need a break by Saturday so we will order pizza and my hubby and I will eat the toppings off of it and make a salad.

Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds

Sweet Treat – Blonde Low Carb Brownies
