I can’t believe another week has already passed. Time goes by so quickly. This weekend, I realized that Women’s Health Magazine Online included our original Keto Challenge that we launched last April in a feature about Keto Diet Challenges. Each Sunday afternoon, I post a Keto Diet Menu Meal Plan for inspiration. There are no requirements to follow this meal plan; I am just sharing what my family is planning to eat in hopes that it makes following Keto or a Low Carb lifestyle seem a little easier. As a busy momma, I don’t have time for complicated, so perhaps my approach will be helpful in your journey.
As I have said before, I take a somewhat lazy approach to meal planning. I don’t prep a lot of food in advance just because I don’t have the time. Instead, I have found that making extra at meals to cover lunch the next day is the most helpful step I can take. I also like to buy ground beef in bulk when I can and brown it in advance and freeze it in ziplock bags. It makes cooking dinner later so much faster. Dinner – Egg Roll in a Bowl
Tuesday:
Breakfast – Bulletproof Coffee
Lunch – leftover Hot Ham & Cheese Unwich Casserole
Dinner – One Skillet Chicken & Asparagus with a salad
Wednesday:
Breakfast – Bulletproof Coffee
Lunch – leftover Egg Roll in a Bowl
Dinner – We eat out on Wednesday nights so we can get to church on time.
Thursday
Breakfast – Bulletproof Coffee
Lunch – leftover One Skillet Chicken & Asparagus with a salad
Dinner – Low Carb Chicken Fajita Soup
Friday
Breakfast – Bulletproof Coffee
Lunch – leftover Low Carb Chicken Fajita Soup
Dinner – Pizza Casserole
Saturday
Breakfast – Cheesy Bacon Bites & Eggs
Lunch – Clean out the fridge of all the leftovers for the week
Dinner – Boston Butt on the smoker with homemade low carb BBQ Sauce & Southern Green Beans
Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds
