I can’t believe another week has already passed. Time goes by so quickly. This weekend, I realized that Women’s Health Magazine Online included our original Keto Challenge that we launched last April in a feature about Keto Diet Challenges.

As I have said before, I take a somewhat lazy approach to meal planning. I don’t prep a lot of food in advance just because I don’t have the time. Instead, I have found that making extra at meals to cover lunch the next day is the most helpful step I can take. I also like to buy ground beef in bulk, brown it in advance, and freeze it in ziplock bags. It makes cooking dinner later so much faster. Monday:

Breakfast – Bulletproof coffee

Lunch – Hot Ham & Cheese Unwich Casserole 

Dinner – Egg Roll in a Bowl 

Tuesday:

Breakfast – Bulletproof Coffee

Lunch – leftover Hot Ham & Cheese Unwich Casserole 

Dinner – One Skillet Chicken & Asparagus with a salad

Wednesday:

Breakfast – Bulletproof Coffee

Lunch –   leftover  Egg Roll in a Bowl 

Dinner – We eat out on Wednesday nights so we can get to church on time.

Thursday

Breakfast – Bulletproof Coffee

Lunch –  leftover One Skillet Chicken & Asparagus with a salad

Dinner – Low Carb Chicken Fajita Soup 

Friday

Breakfast – Bulletproof Coffee

Lunch – leftover Low Carb Chicken Fajita Soup 

Dinner – Pizza Casserole 

Saturday

Breakfast – Cheesy Bacon Bites & Eggs 

Lunch – Clean out the fridge of all the leftovers for the week

Dinner –  Boston Butt on the smoker with homemade low carb BBQ Sauce & Southern Green Beans

Snacks – Homemade Cheese Cracker Crisps, pecans, or pork rinds

Sweet Treat-  Peanut Butter Fluff
